Yummiest Granola Bars

Updated: Jan 18, 2021

This is hardly a recipe, it's more of a throw in the bowl everything you like and then hold it together with peanut butter and honey. YUMMY :) You really can't go wrong, so get creative. Amounts and ingredients will vary according to taste buds and how much you want to make. Below is a good place to start.

3 cups oats (I like the texture of regular oats but quick oats work too)

1 1/2 cups peanut butter

1/2 - 1 cup honey (more or less to hold everything together)

1 tablespoon of cinnamon

1 tablespoon of vanilla extract

1/2 cup chopped nuts of some kind

1/2 cup craisins or raisins

Those are the basics and you can build on it from there. I put maple extract in the pictured bars above, giving them the dark color. You can add nutritional seeds like flax, chocolate chips, protein powder (I used a scoop of Thrive), anything else you love in a granola bar.

Mix everything in a large bowl to combine. Add more honey if you can't get everything to stick together. You may have to get your hands dirty to accomplish the job, a spoon just won't cut it ... your arm will give out before it's mixed well. (Trust me on this ;)

Drop the mixture onto a foil-lined cookie sheet and press down a bit to cover the whole pan. Then grab a sheet of parchment paper and a rolling pin. Place the parchment over the mixture and use the rolling pin to flatten it out evenly. Once it's even and firmly packed down leave the paper in place and refrigerate. Wait an hour or so then use a pizza cutter to slice into bars. Store in the fridge ... not that they will be stored for long because these bad boys will be devoured🍴

Enjoy 😋
