Seasoned Burgers
Even if you aren’t a burger fan … you gotta try these!! Super simple and full of juicy flavor.
1# Ground Beef
1/2 Cup Salsa (adjust if needed, you don’t want it soupy)
1/2 packet of Meatloaf Seasoning
Mix together and make patties. AMAZING!! If you are a cheese eater, they are even better with 1/2 cup of mozzarella chunks mixed in. They melt into little pockets of goodness. The salsa will make them very moist so don’t mistake the juice as not being done, avoid overcooking. Enjoy 🙂
Sauteed Zucchini
Zucchini
Garlic
Coconut Oil
Soy Sauce
Cut into large chunks so they retain some texture. Rinse after cutting to get the sticky off and they don’t cling to each other during cooking.
Heat non-stick pan over medium-high heat then add a tablespoon of coconut oil, it’s great for higher heat cooking.
Add garlic and toss in zucchini. I like my garlic crunchy brown so I add it at the start but if you don’t like the nutty flavor of browned garlic just add it later. Cook a couple of minutes per side so you get color but not so long that it gets smoochy. Unless smoochy is what you like … then by all means 😉 At the very end sprinkle with very little soy sauce to get more flavor and that rich color. Remove from heat and enjoy.
