Meatloaf

1 pound ground beef
1 pound ground pork
1 small chopped onion
1 chopped bell pepper
1 tsp smoked Tabasco
1 egg
1 cup of Ritz cracker crumbs (if you are worried about carbs you can leave these out)
Seasoning packet (I prefer McCormick)
*Add any extra seasoning you like. I’m a Montreal Steak seasoning & Jonny’s kind of girl. Some red pepper flakes gives it heat.
Mix all together in a big bowl. It’s time to get your hands dirty because it’s the only way to really mix meatloaf together perfectly. Shape it into a loaf and top w ketchup. I don’t use a loaf pan because I like the entire loaf covered in caramelized ketchup. Yum!! Bake at 375 about 40-50 minutes.
*Slow Carb - add 1/2 Cup of rinsed Black Beans or Refried. Refried make a little less dense loaf.
*Keto - add 1/2 Cup of chunked cheese of
your choice.
