Crackers are my CRACK so when going keto they were the hardest food group for me to give up. I love everything on a cracker or just the cracker alone. Literally, my favorite snack/lunch/lite dinner is cheese and meat on CRACKERS. I thought I was being really smart making the healthy choice by getting gluten-free crackers ... boy was I wrong! This idea came to me as I was standing at the deli counter having crab salad packed into one of those little (in my case big) clear plastic containers. My mind was racing trying to imagine how on earth I was going to eat all the deliciousness without a cracker. 😫
Then it hit me ... do I need a cracker OR do I just need a vessel to carry the goods from the container to my mouth? The vessel being the operative word as I thought of a boat and what makes a sturdy veggie boat better than a pepper? Be it a small sweet or sliced wedge of large pepper... the outcome is the same... The Perfect Vessel 🛶
The ideas are limited only by your imagination. Pictured I've got crab, curry chicken, and egg salads in my pepper boats. They're PERFECTION!! The flavor they add to the salads is Off The Hook!!
